Aubergine Bake
2 lg Tomatoes; sliced
1 Aubergine; thinly sliced
1 lg Onion; sliced
Grated vegetarian cheese
1 sm Cart plain yogurt
Breadcrumbs
Herbs eg basil or oregano
Grease ovenproof baking dish with vegetable oil. Place in it one layer of tomatoes, covered by a layer of onion, then aubergine, adding salt, pepper and herbs to taste.
Repeat process. Cover with yogurt, cheese then breadcrumbs.
Bake in hot oven (375 degrees F/190 degrees C/gas mark 5) for about 40 minutes.
